Banana Muffins

Whether you are in the same household and can make them together or apart and schedule a zoom call, these easy banana muffins will have you coming back for more.

They are simple to make and always give delicious results. Surprisingly they come out much lighter than your standard banana loaf and are just as comforting. I know we have all been baking a lot of banana bread in lockdown and that’s why I wanted to add this slightly different twist.

The browner the bananas the better so if you have any that need using up, great! If you don’t have any ripe bananas available but still want to give it a go, whizz them up in a blender. They will work just as well but won’t have as intense of a banana flavour as the ripe will give you.

These are best enjoyed with a drizzle of honey and a pot of tea while you put the world to rights with your friends and family or while you read on of our blogs.

 Ingredients

  • 250g self raising flour
  • 1 tsp baking powder
  • 1/2 tsp bicarb
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 115g golden caster sugar
  • 2 large banana, ripe
  • 2 eggs
  • 120ml milk

 Method

  1. Preheat the oven to 180°C.
  2. Melt the butter over a low heat and allow to cool for 5 minutes. Mash your bananas in a bowl until almost smooth.
  3. Add the eggs, milk and butter to the banana and whisk well.
  4. In another bowl, add all of the dry ingredients (including the sugar) and mix together.
  5. Pour the wet ingredients into the dry ingredients and fold through. You don’t want to over mix, a few lumps in the batter is fine.
  6. Add the batter to your cases and fill around 2/3 full.
  7. Bake in the oven for 20 minutes.
  8. Top the muffins with a drizzle of honey and enjoy!

Notes

  •  Add 70g of Chocolate Chips to your batter before baking for Banana and Chocolate Chip Muffins.
  • If you like nuts, add 70g of your favourite. We love pecans in this recipe!
